What is a dry contact cable, and how does it work?
Dry contact is not a measurement but a state. The cable detects whether a contact is closed or open and passes it on to the data logger as a measuring point with two states.
It sounds simple, but it is often what explains a deviation. A temperature rise in the middle of the day looks like an unexplained fault, until you can see that the door was open for forty minutes. The difference matters, because one is a technical fault that needs fixing and the other is a work routine that needs changing.

The product in use
On a refrigerator the contact is mounted at the door, so an open door is recorded together with the temperature in the same curve.
On emergency power and ventilation, the installation's own alarm output is connected, so a technical fault is reported in the system instead of only on the installation's own panel.
